Pumpkin Spice Apple Hand Pies

2. Make the pie filling: Preheat the oven to 375°F. Melt the butter in a large saucepan over medium heat. Stir in the whipped honey, cinnamon, nutmeg, and salt. Add the apples and cook until the apples begin to soften, about 10 to 15 minutes. Cover, remove from the heat, and let cool for 10 minutes.

3. Fill the hand pies: Carefully unroll one of the pie crusts. Cut the dough into quarters, and place on a parchment paper-lined baking sheet. Repeat with the remaining crust and place on a separate baking sheet. Divide the filling between the dough, spooning into the centers of each dough quarter.

4. Finish and bake: Whisk together the egg and water in a small bowl. Using a pastry brush, brush the edges of the dough with the egg wash to create the “glue” as you would on an envelope. Fold the dough over filling and press the edges to seal. Use the tines of a fork to crimp the long side of the hand pie. Crimp the short side (top side) of the hand pie as you would when making a traditional pie. Brush the tops of the hand pies with egg wash, and cut 1 to 3 slits to create vent holes. Sprinkle with sanding sugar, if desired. Bake for 15 to 17 minutes or until the crust is golden brown and flaky.

To Serve: You can serve these warm or room temperature, but we love them straight out of the oven with a scoop of vanilla bean ice cream and a drizzle of Pumpkin Spiced Whipped honey.

Pro Tip: We added a heaping teaspoon of Pumpkin Spice Whipped Honey to each hand pie before baking… just for fun and spice.
